Hollandaise sauce is a must have recipe for any decent chef to have in their repertoire, perfect for topping eggs, green vegetables or filet mignon. Ingredients: 3 eggs, yolks only; 1/2 cup of butter; 2 tbsp of lemon juice; 1/4 tsp of salt; a pinch of cayenne pepper. Method: 1. In a small saucepan, heat butter to a bubble, but don't brown. 2. Combine egg yolks, lemon juice, salt and cayenne pepper in a blender. 3. While blending at high speed, gradually add the hot butter. 4. Blend for about 15 seconds or until the sauce has thickened and is smooth.
