I've been using this recipe for years and there is just no need to rewrite an entirely perfect recipe! You know what they say, If it ain''t broke, don't fix it!! These blueberry muffins are incredibly fluffy yet moist and decadent! Blueberry muffins sound so boring but these are just the opposite. You will feel like a pro baker after taking one bite of these babies I promise!

Best Blueberry Muffins Recipe
*Makes 12 Muffins, Double the Recipe for 24 Muffins
| Ingredients |
1 ½ Cups All Purpose Flour
2 Teaspoons Baking Powder
½ Teaspoon Salt
1 Cup Granulated Sugar
1/3 Cup Vegetable Oil
About 1/3 Cup Buttermilk
1 Teaspoon Vanilla
1 Cup Fresh Blueberries
2/3 Cup Flour
4 Tablespoons Brown Sugar
¼ Teaspoon Cinnamon
¼ Teaspoon Baking Powder
4 Tablespoons Butter, Melted
| Instructions |
Preheat oven to 400 degrees F. Line muffin tins with muffin liners.
Place vegetable oil into a 1 cup measuring cup, add the egg, and enough buttermilk to fill to the 1 cup mark. Add vanilla and combine.
In a standing mixer, mix sugar and the buttermilk mixture until fully combined.
In a separate bowl, combine flour, baking powder, and salt.
Add flour mixture to the wet ingredients and mix until just combined. Do not over mix!
Fold in fresh blueberries gently.
Fill each muffin liner ¾ of the way. Top with streusel topping.
Bake at 400 Degrees F for 20 -25 minutes or until a toothpick inserted in the center comes out clean.
To make streusel topping:
Combine flour, brown sugar, baking powder, cinnamon, and salt in a small bowl. Stir in melted butter until a crumble forms.
